Eat at Joe's to open diner at end of April According to Cosenza -- who also operates Eat at Joe's Express and the Philly Steak and Gyro Co. in the food court in the 3401 Walnut Street complex -- the restaurant did not meet its scheduled opening date because owners realized that the original design and setup of the restaurant were "not what we wanted." Managers at the Cherry Hill, N.J.-based chain's food court location, which opened last fall, spoke with students to find out what types of food were missing from the current menu, Cosenza said. "We have upscaled the menu to include healthier types of foods," he said. "We don't want to be a greasy spoon." But Cosenza said the restaurant will still keep traditional menu items such as burgers, french fries and milkshakes. Construction will begin March 1, he said. University officials decided to seek a 24-hour diner for the campus in response to a recent Undergraduate Assembly survey of students. -- Sari Post
